Banana Muffins with White Chocolate and Macadamia Nuts


I kind of enjoy baking while on vacation, especially when I have access to some fun tropical ingredients. It's easy to be inspired by the local produce produce. Last time we were in Maui, I made Lemon Coconut Scones and Maui Mango Ginger Granita. These were a great breakfast treat and the macadamia nuts added a nice crunch to each bite. 


I took these shots down at the beach in front of where we are staying.  This little crab totally posed for my pictures. 


Banana Chocolate Chip Muffins
3 1/2 cups flour
1 cup sugar
2 tbsp. baking powder
1 tsp. salt
1 bag of white chocolate chips
1/2 cup chopped macadamia nuts (or more)

2 egg
2 tsp. vanilla
1/2 cup oil
1/2 cup greek yogurt
2 cups mashed banana


Mix the dry ingredients together.  Mash the ripe bananas add the egg, oil, vanilla and yogurt.  Make a well in the dry ingredients and pour the wet ingredients in.  Mix until just moistened.  Fill 2 dozen paper lined muffin cups.  Bake at 400F for 20 to 25 mins.

    2. 1. What is the cup size? I always tried Turkish blog's recipes and i cant be sure it is the same size or sth else. 2. Is it okey if i use strained yogurt?

    3. I found this blog about food. http://cafefernando.com/ And i learnt that american cup= our water glass :) I bought the yogurt but ofc it is Turkish, too :D I am baking it right now :D

  2. I made your banana choc chip muffins this a.m., it's my go-to muffin recipe and I put different add-ins based on what I've got. This muffin recipe is a little different but sounds good too!!

    1. It's totally based on that recipe. This is a lot sweeter with the white Choc, almost more of a dessert.
