Cinnamon Puffs

A friend just introduced me to some uncooked tortillas at Costco.  When I lived in Yemen and in Papua New Guinea, I had to make flour tortillas from scratch anytime we wanted Mexican food.  I'll give you that recipe, but really it's not worth all the rolling out time, when you can buy them already done.   They taste so much better then the cooked tortillas that you buy.
A good friend is feeling under the weather, so I made a big pot of my Green Chili Enchilada Soup, some mini cheesy corn muffins, and a big bowl of cinnamon puffs for dessert.  If you can think of a better name, please let me know.  They aren't chips, because they aren't hard and crispy.  They are tender, puffy pillows.  I just cut the  uncooked tortillas into wedges with a pizza cutter and then deep fried them in canola oil.  They take just a few seconds on each side.  While they were still warm I sprinkled them with cinnamon and sugar.  They are best eaten warm that's for sure.
There is nothing fancy about the corn bread.  I always use Jiffy Corn Muffin Mix and throw in a 1/2 cup of sharp cheddar.  Martha Stewart said many years ago that she always uses Jiffy and I agree with her.

Flour Tortillas

2 cups flour
1 tsp. salt
1/4 cup shortening
about 1/2 cup water

Combine ingredients with enough water to moisten.  Knead about 50 times.  Divide into 8-10 balls, cover and let stand for 15 mins.  Roll out dough and thin as possible.  Fry in an dry skillet (no grease!)
