Orange Almond Bundt Cake
1/2 cup butter
1 cup sugar
2 eggs
zest of 1 orange
1 tsp. vanilla
1 tsp. almond essence
1 1/2 cup flour
1 1/2 tsp. baking powder
1/2 tsp. salt
1/2 cup butter milk
1/4 cup slivered almonds (lightly toasted)
juice of one orange
1 - 2 cups powdered sugar
In a mixer, beat the butter and sugar. Add the eggs, zest, vanilla, and almond essence. Beat until smooth. Mix in the butter milk. Add the flour, baking powder, and salt.
Pour into a greased and floured bundt pan. Bake at 350 F for about 40 mins or until a tooth pick comes out clean.
Mix together the orange juice and powdered sugar to make a glaze. While the cake is still warm, pour the glaze over the cake and then sprinkle with the almonds.

I LOVE bundt cakes!! They are so dense and satisfying without being overwhelmingly sweet.

ReplyDeleteHi, I was wondering what size pan you used? I just put this in the oven, and I have a standard size bundt pan (I think about 12 cups). However, when I read the original recipe from which this was adapted, it says to use a 6 cup bundt pan. I'm hoping mine still turns out ok, despite the much larger pan.
