Don't Serve Canned Cranberry Sauce!

Really, just don't do it.  Thanksgiving turkey deserves a worthy mate.  Fresh cranberry sauce is so easy and tastes so much better then the lump of cranberry gel you get out of a can.
Fresh Cranberry Sauce
1 lb Fresh Cranberries (rinsed)
zest of one orange
juice of one orange
1 1/4 cup sugar

Combine all ingredients in a sauce pan.  Simmer on low for 15 mins (or more) till all the cranberries burst and the sauce thickens.  Refrigerate until time to serve.  I made mine the day before, I figure it's just one less thing to do tomorrow.

Hope you have  a great Thanksgiving.  Enjoy your family and friends and take time to think of all that you are thankful for.  Better run, pies are next of the list of things to do today.

  2. Oh yes! Cooked cranberries are amazing - after Thanksgiving I buy heaps of them and freeze the bags. We eat cooked cranberries all through the year. Great vitamin C and very yummy. I've only made them plain - 1 C water and 1 C sugar. Make sure you boil and soften them before you add the sugar so they aren't tough. :) Happy Thanksgiving!
