Vanilla Bean Scones

Have you ever had the Petite Vanilla Bean Scones at Starbucks? Well, I think these might be better.  They are lighter and moist.  I mentioned in my 'Welcoming New Neighbors' post that I would share the recipe for these delicious breakfast (or any time) treats.  So, here it is. 
Vanilla Bean Scones

2 cups flour
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 cup sugar
5 tbsp. cold butter

1 cup plain Greek yogurt
1 egg yolk
2 tsp. vanilla
1 tsp. Vanilla Bean Paste or scrape one vanilla bean

Mix all the dry ingredients together, then cut in the butter using a pastry knife.  Mix the yogurt, egg yolk, vanilla and vanilla paste in another bowl.  Add the wet to the dry and just barely mix until combined.  Follow my step by step instruction for my biscuits for additional help.  Divide the dough into 2 parts.  Pat into a circle and cut into 8 slices just like my Lemon Coconut Scones.  Bake on parchment paper at 400F for about 12-15 mins.  Dip the tops of the scones in the glaze while they are still warm.

Glaze
1 tbps. vanilla bean paste
2 tbps. cream or half and half
1 1/2 - 2 cups of powdered sugar

  2. YUM-O!! Just took my first bite of my own batch! These are tasty! I used vanilla (not-greek) yogurt and milk instead of cream... and it turned out so delish! Looking forward to my morning coffee tomorrow with a side of yummy scones! Thanks for sharing!

  3. Thanks for the great recipe! Made these today with my 2 year old, she made an enormous mess but we had a great time and they tasted beautiful xx

    1. Yay! glad you made them. I love cooking with my kiddos. I'm not really good at sitting and playing with toys on the floor, but I love to include my kids in the activities I do around the house. It is messy, but messy is fun.
