I think this is a recipe a cut from a can of pumpkin over 13 years ago, when I was first married. It's a favorite of ours so I thought I would share the recipe. These muffins are super moist and packed with chunks of apple.
Pumpkins Apple Muffins
2 1/2 cups flour
2 cups sugar
1 tbsp. pumpkin pie spice
1 tsp. baking soda
1/2 tsp. salt
2 eggs
1 cup pumpkin puree
1/2 cup veg. oil
2 cups apples, peeled and chopped
Combine first five dry ingredients in a bowl. Beat eggs, add pumpkin, oil and apples. Add the pumpkin mixture to the dry ingredients. Stir until just combined. Fill 18 paper lined muffin cups 3/4 full. Top each muffin with about 1 tbsp. of the crumb topping (see below). Bake at 350F for 35 to 40 mins.
Crumb Topping
2 tbsp. flour
4 tsp. cold butter
1/2 tsp. cinnamon
1/4 brown sugar
