I've been making this recipe for many years. To be honest, I don't know where I got this recipe even. It's one of my husband's favorite. It's especially yummy with a good cup of tea. The crispy Italian cookies are great dunkers.
Cranberry Orange Biscotti
2/3 cup sugar
1/2 cup vegetable oil
1 tbsp. grated orange peel
1 1/2 tsp. vanilla
2 eggs
2 1/2 cups flour
3/4 cup dried cranberries (coarsely chopped)
1 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
Preheat the oven to 350F.
Mix sugar, oil, orange peel, vanilla and eggs in a large bowl. Then stir in the remaining ingredients.
Turn dough onto and lightly floured surface. Knead until smooth. Make into 2 rectangles (10x3 inches) on a parchment lined cookie sheet.
Bake 25-30 mins. Cut into 1/2 inch slices with a bread knife. Lay slices on cookie sheet and bake 15 mins more, turning once until the cookies are crisp and light brown. Immediately remove form cookie sheet and place on a wire rack to cool.
Hey Jeran, I just finished making Cranberry Orange Cookies, but with fresh cranberries - I think they are my new favorites. It would sure be fun to have another cooking day together - maybe one of these days I will find my way south!
