Chicken and Pear Curry
This is an old stand by on a night when I have no time or energy to cook. I love curry, and especially curry that has a little sweet to it. I think the recipe originally came from a Real Simple Magazine, but I'm not sure. Either way, I've changed it a bit. It MUST be served with the mashed sweet potatoes for sure.
Chicken and Pear Curry
2 tbsp. olive oil
4 chicken breast (cut into 2 inch pieces)
2 fresh pears (cut into 8 slices and cored)
1 onion, sliced
2 tbsp. curry powder
1 tbsp. flour
1 1/2 cups chicken broth
2 tbsp. ketchup
In a large nonstick fry pan, heat 1 tbsp. oil and then cook the chicken breasts. Remove the chicken from the pan and cook the pears for 2 minutes, turning them often. Remove the pears from the pan. Add the remaining oil and onion and cook the onion until it begins to soften. Stir in the flour and curry powder. Add the broth and ketchup, bring to a boil. Return the chicken and pears to the pan. Reduce the heat to low and cook covered for 15 to 20 mins. Add salt and pepper to taste.
Mashed Sweet Potatoes
3 large sweet potatoes, peeled and cut into chunks
2 tbsp. butter
1/4 cup milk
Cook potatoes in salted water until tender. Mash the potatoes and add the butter, milk and salt and pepper.

This looks SO good! I've had a pear curry soup before and it was the perfect mix of sweet and spicy! I must give this a try.
